I can definitely say this is years of perfection! I love beef! And I super love beef that melts in my mouth! Whats better than a bowl of hot comfy beef stew with warm baguette or rice?!
My beef stew was first sold publicly in 2016 at the now closed Dong Po Colonial Cafe . Its been 5 years since and after much improvements, its now a staple popular on our catering menu.
Some food dishes are just better overnight or longer… Like stews, braise, some soups… So why not cook it, keep it frozen then reheat it – all the goodness and principles of homecooking still intact!
I have tested many “supplies” of beef brisket. Even though we don’t sell fresh beef in SG (frozen or frozen-thawed are sold), somehow the quality and cut still differs from suppliers and after so many years, this Chinese auntie that I get my brisket supply from is the best (i have tried almost 10 suppliers)! 40% more expensive than most suppliers but most definitely worth it! Her brisket quality and cut are good, making it alot more flavourful, melts in your mouth and the brisket are even “marbled”!!!!
About 2 months ago, as part of my R&D, I gave away a few packs of frozen beef stew to my regular customers who have been ordering my beef stew (the plate of beef stew is the exact photo of the frozen beef stew heated up via the microwave). The feedback was good and I tested it with my man at the 1st, 2nd and 3rd month mark and it only got better!!! Shiok!!! The same recipe has been tweaked with kampong chicken for the non-beef fans… These are my proud babies…
