The pork trotters are first blanched and caramelised in a pool of aromatics – ginger, garlic, shallots, spring onion, coriander, brown sugar. Then with dried mushrooms and the power “双料黑醋”, into the pressure cooker it goes. The thickened sauce is so good you can drink it on its own!!!

My Vinegar Pork Trotters Story

I was 10yo, “99” has made a whole pot of vinegar pork trotters for my cousin who was in her confinement then the adults need to go out to do some shopping. I was hungry. I went to the kitchen, climbed onto the chair and took all the eggs, mushrooms and vinegar sauce in the pot!!! Like really I 1 person ate them all up except for the pig trotters!!! By the time “99” came back she is not sure if to laugh or be angry at me. Lol. I think it was like a 5-6pax portion then. Ahahhaha i was just loving it!!!
